How to make Homemade Candy Canes

Prep Time: 1 hour, 15 minutes
Total Time: 1 hour, 15 minutes

Ingredients

3 cups granulated sugar
1 cup light corn syrup
1/4 cup water
1/2 tsp peppermint extract
A few drops of red food coloring
Plastic gloves
 
Instructions
1. Prepare two cookie sheets by spraying them with nonstick cooking spray or covering them with a light layer of oil.
2. Preheat your oven to 200 degrees.
3. Combine sugar, corn syrup, and water in a large saucepan.
4. Bring to a boil over medium heat, stirring continuously, until the sugar dissolves.
5. Insert a candy thermometer and continue cooking without stirring until the candy reaches 285 (soft-crack stage).
6. Once the proper temperature is reached, remove the candy from the heat immediately and stir in the mint extract.
7. Pour half of the mixture onto the prepared cookie sheet and place it in the preheated oven to stay warm.
8. Add red food coloring to the remaining candy.
9. Pour the candy out onto a marble slab or heat-safe cutting board. Allow it to sit briefly until it forms a “skin.”
10. Spray a bench scraper or heat-safe spatula with nonstick cooking spray, and use the tool to begin spreading the candy out and pushing it back together, working it across the board and allowing it to cool.
11. Don’t forget to check out the instructions showing how to pull candy if you get confused about the process.
12. As soon as the candy is cool enough to handle (but still quite hot), begin to pull it.
13. If you have plastic gloves, put them on and spray the gloves with nonstick cooking spray—this will help prevent overheated or burned hands.
14. Take the candy in both hands and pull the hands in opposite directions, stretching the candy into a long rope.
15. Bring the ends of the strands together and twist the candy into a rope, then pull the rope out into a long strand.
16. Continue to twist and pull the candy until it has a satin-like finish and is an opaque red color. 17.Once the candy is still pliable but barely warm, pull it into a strand about 2” thick, and place it on the remaining prepared baking sheet.
18. Put this sheet back into the oven, turn off the heat, and remove the baking sheet with the other half of the candy syrup.
19. The pulled candy will remaining pliable in the warm oven while you work the second portion.
20. Repeat the pulling procedure with the second, clear portion of candy. At the end, the candy should be a pearly white color.
21. Form it into a log 2” in diameter, just like the red candy.
22. Remove the red candy from the oven. Cut a 5-inch segment from the white and the red log, and place them next to each other.
23. Begin to pull the candies together, twisting gradually to form the familiar candy stripes.
24. Once the twisted candy is the thickness you want, use oiled kitchen shears to cut them to approximately 8” lengths.
25. Immediately form the hook at the top of the cane, and place it on a baking sheet to set at room temperature.
26. Repeat the twisting with the remaining candy.
27. If the candy gets too hard to pull, place it in the warm oven for a few minutes to soften, but don’t let it sit too long and melt.
28. The candy canes will get very hard at room temperature, but if left out for long periods of time they will get soft and sticky, so be sure to wrap them in cellophane once they are set.

How to make Homemade Hot Chocolate

Makes: 4 servings

Ingredients
1/3 cupunsweetened cocoa powder
3/4 cupwhite sugar
1 pinch salt
1/3 cupboiling water
3 1/2 cupsmilk
3/4 teaspoonvanilla extract
1/2 cuphalf-and-half cream

Directions
1. Combine the cocoa, sugar and pinch of salt in a saucepan. 
2. Blend in the boiling water. 
3. Bring this mixture to an easy boil while you stir. 
4. Simmer and stir for about 2 minutes. 
5. Watch that it doesn't scorch. 
6. Stir in 3 1/2 cups of milk and heat until very hot, but do not boil! 
7. Remove from heat and add vanilla. 
8. Divide between 4 mugs.
9. Add the cream to the mugs of cocoa to cool it to drinking temperature.
10. Enjoy!!

How to Make Apple Cider

Makes: 6 servings

Ingredients
6 cupsapple cider
1/4 cupreal maple syrup
2 cinnamon sticks
6 whole cloves
6 whole allspice berries
1 orange peel, cut into strips
1 lemon peel, cut into strips

Instructions
1. Pour the apple cider and maple syrup into a large stainless steel saucepan.
2. Place the cinnamon sticks, cloves, allspice berries, orange peel and lemon peel in the center of a washed square of cheesecloth.
3. Fold up the sides of the cheesecloth to enclose the bundle
4. Tie it up with a length of kitchen string.
5. Drop the spice bundle into the cider mixture.
6. Place the saucepan over moderate heat for 5 to 10 minutes, or until the cider is very hot but not boiling.
7. Remove the cider from the heat.
8. Discard the spice bundle.
9. Ladle the cider into big cups or mugs, adding a fresh cinnamon stick to each serving if desired.

How to make Peanut-Butter Fudge

Makes: 64 (1in) pieces

Ingredients
8 ounces unsalted butter, plus more for greasing pan
1 cup smooth peanut butter
1 teaspoon vanilla extract
1 pound powdered sugar
 
Instructions
1. Combine the butter and peanut butter in a 4-quart microwave-safe bowl and cover with plastic wrap.
2. Microwave for 2 minutes on high.
3. Stir and microwave on high for 2 more minutes. (Use caution when removing this mixture from the microwave, it will be very hot.)
4. Add the vanilla and powdered sugar to the peanut butter mixture and stir to combine with a wooden spoon.
5. The mixture will become hard to stir and lose its sheen.
6. Spread into a buttered 8 by 8-inch pan lined with parchment paper.
7. Fold the excess parchment paper so it covers the surface of the fudge and refrigerate until cool, about 2 hours.
8. Cut into 1-inch pieces and store in an airtight container at room temperature for up to a week.

How to make Chocolate Chip Cookies


I hope you have been making some recipes. Since yesterdays recipe was really long I figured I would put a easy recipe on here. Comment if you want to know a recipe.

Makes 4 Dozen

Ingredients
1 cupbutter, softened
1 cupwhite sugar
1 cuppacked brown sugar
2 egg

2 teaspoonsvanilla extract
3 cupsall-purpose flour
1 teaspoon baking soda
2 teaspoonshot water
1/2 teaspoonsalt
2 cupssemisweet chocolate chips
1 cupchopped walnuts

Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Cream together the butter, white sugar, and brown sugar until smooth.
3. Beat in the eggs one at a time, then stir in the vanilla.
4. Dissolve baking soda in hot water. 
5. Add to batter along with salt.
6. Stir in flour, chocolate chips, and nuts.
7. Drop by large spoonfuls onto ungreased pans.
8. Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

How to make a Chocolate Peppermint Cake

Makes 12 servings

Ingredients
Filling:
8 ounces imported milk chocolate (such as Lindt), finely chopped
1/2 cup whipping cream
1 tablespoon light corn syrup
1/2 teaspoon peppermint extract
Cake:
1 cup sifted all purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1 cup sugar
1/3 cup (packed) dark brown sugar
2 teaspoons vanilla extract
3 large eggs
1/2 cup buttermilk
1 1/2 cups miniature semisweet chocolate chips
Chocolate Glaze:
8 ounces bittersweet (not unsweetened) or semisweet chocolate, finely chopped
1/2 cup (1 stick) unsalted butter, cut into pieces
1 tablespoon light corn syrup
3/4 teaspoon peppermint extract
12 whole red-and-white-striped hard peppermint candies, chopped
Fresh mint leaves
 
Instructions
For filling: 1. Place chocolate in medium bowl.
2. Bring cream and corn syrup to simmer in small saucepan.
3. Pour hot mixture over chocolate; add extract and let stand 1 minute.
4. Whisk until mixture is smooth.
5. Let filling stand at room temperature while cake is baking and cooling.
For cake: 1. Position rack in lowest third of oven and preheat to 350°F.
2. Butter 9-inch-diameter cake pan with 2-inch-high sides.
3. Line bottom with parchment paper.
4. Butter parchment.
5. Dust pan with flour.
6. Whisk first 5 ingredients in medium bowl to blend.
7. Using electric mixer, beat butter in large bowl until light and fluffy.
8. Gradually beat in both sugars, then vanilla.
9. Add eggs 1 at a time, beating well after each addition.
10. Beat in dry ingredients alternately with buttermilk in 2 additions each.
11. Mix in chocolate chips.
12. Transfer batter to prepared pan.
13. Bake cake until tester inserted into center comes out clean, about 1 hour 5 minutes.
14.  Cool cake in pan on rack 5 minutes.
15. Turn out cake onto rack. Peel off parchment. Cool completely.
16. Using electric mixer, beat filling until fluffy and lightened in color, about 30 seconds.
17. Using serrated knife, cut cake horizontally in half.
18. Place 1 layer, cut side up, on rack set over baking sheet. Spread filling over.
19. Top with second layer, cut side down. Chill filled cake 20 minutes.
Meanwhile, prepare glaze: 1. Stir chocolate, butter, and corn syrup in heavy small saucepan over low heat until melted and smooth.
2. Mix in extract.
3. Cool glaze until just lukewarm but still pourable, stirring occasionally, about 20 minutes.
4. Pour 1/2 cup glaze over center of cake.
5. Spread over top and sides of cake.
6. Chill until glaze sets, about 15 minutes.
7. Pour remaining glaze over center of cake, then spread quickly over top and sides.
8. Chill until glaze sets, about 1 hour.
9. (Can be made 1 day ahead. Cover with cake dome; chill. Before continuing, let stand at room temperature until softened, about 4 hours.)
10. Sprinkle candies around top edge of cake. Garnish with fresh mint leaves.

How to make White Chocolate Peppermint Brownies


Todays Blog is a recipe on how to make Peppermint Brownes. It great to have when you got Christmas Parties. If you would like a recipe to something else just comment.

Ingredients
1 tablespoon softened unsalted butter and foil for preparing pan
Batter:
1 cup plus 2 tablespoons all-purpose flour
¼ teaspoon salt
1 cup (2 sticks) unsalted butter
5 squares (1 ounce each) unsweetened baking chocolate, coarsely chopped
4 large eggs
2 cups granulated sugar
2 teaspoons pure vanilla extract
Topping:
2 cups white chocolate chips
¾ to 1 cup soft peppermint candies, coarsely chopped

Instructions
1. Preheat oven to 350 degrees F. 
2. Prepare one 13x9x2 inch oblong pan; line with heavy duty aluminum foil, allowing extra foil  to overhang the edge to make easy to remove after baking.
3. Use a pastry brush to brush sofened butter over bottom and sides of the foil.
4. In a small mixing bowl, combine the flour and salt; whisk together to mix. Set aside.
5. In a small heavy saucepan over low heat, combine butter and chocolate; stir constantly with a rubber spatula or wooden spoon until melted so mixture does not burn.
6. Remove from heat and cool slightly. Or, place the chocolate and butter in a microwave-safe bowl, microwave at 50% power and stir frequently just until the chocolate is melted; do not overheat as mixture will burn easily.
7. Set aside to cool slightly. Or, place butter in a bowl set over a pan of simmering water, the bottom of the bowl should not touch the water.
8. When the butter is almost melted add the chocolate.
9. After one minute remove the bowl from the heat and let sit until the chocolate is completely melted, stirring occasionally.
10. Set aside to cool slightly.
11. In a large mixing bowl, lightly whisk the eggs with a wire whisk to break them up.
12. Add the sugar and continue whisking to mix together.
13. Add the warm butter and chocolate mixture and vanilla and stir with the whisk until blended. 14. Don’t over-whisk, you are not trying to add air into the mixture.
15. Add the flour in 3 additions, blending with the whisk or wooden spoon just until blended.
Bake:
1. Pour the batter into the prepared pan, smoothing the top with the back of a spoon.
2. Bake for 28 to 30 minutes, or until a toothpick inserted into the center has just a few moist crumbs that cling to the toothpick.
3. Do not overbake.
Topping:
1. Remove from oven.
2. Immediately sprinkle white chocolate chips onto the hot baked brownie and let sit until the chips are melted, about 5 minutes.
3. Using an offset spatula, smooth the chocolate evenly over the top of the brownie.
4. Sprinkle chopped peppermint candies evenly over warm chocolate.
5. Place pan on a wire cooling rack to cool completely, from 2 to 4 hours, before cutting.
6. When cool, use the foil overhang to lift brownie from the pan, and cut into 2 inch squares. Tip: My favorite tool to cut brownies is a stainless steel dough scraper; simply push the dough scraper straight down into the brownie for straight cuts. Or use a pizza cutter or small kitchen knife to cut the brownie into squares.

How to make Gingerbread


Well thanks to a comment on one of my recent post I have figured out what I'm going to do. This post is going to tell you how to make gingerbread cookies. If you would like to know a recipe to something else just comment.

Prep Time: 20 min.
Cook Time: 10 min.
Servings: Makes about 12 6-inch cookies.

Ingredients
1/2 cup butter, softened
1/2 cup brown sugar
1/4 cup molasses
1/4 cup honey
1 egg
1 teaspoon vanilla extract
2 1/2 cups unbleached flour
2 teaspoons ginger powder
1 teaspoon baking soda
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon salt
1/8 teaspoon cloves


Instructions
1. Preheat oven to 350 degrees.
2. Cream together butter, sugar, molasses, and honey.
3. Beat in egg and vanilla extract.
4. In another bowl, combine dry ingredients.
5. Add to wet ingredients and mix well.
6. On a floured surface, in batches, roll the dough to 1/4-inch thickness.
7. Cut, using cookie cutters or stencils.
8. Place on ungreased baking sheets.
9. Bake about 8 to 10 minutes, until nicely browned and sturdy.
10. Frost when completely cooled.

How to make your own Iced Mocha Latte

Makes 1 serving

Ingredients
3 ounces freshly brewed espresso
3 tablespoons chocolate sauce
2 percent milk
Ice cubes
Whipped cream
Cocoa powder, for garnish


Directions
1. Mix espresso with chocolate sauce until sauce is completely dissolved.
2. Pour into tall glass.
3. Fill 3/4 of the glass with milk and top with ice.
4.  Mix again with a tall stirring spoon.
5. Top with whipped cream and sprinkle with cocoa powder.

How to make Eggnog


This post is gonna be the start of the Christmas special on my blog. In this blog it will tell you how to make eggnog and if you will like to know some other Christmas recipes just email me or comment.


Total Time: 15 min
Makes 6 to 7 cups
 
Ingriedents
4 egg yolks
1/3 cup sugar, plus 1 tablespoon
1 pint whole milk
1 cup heavy cream
3 ounces bourbon
1 teaspoon freshly grated nutmeg
4 egg whites*
 
Directions
1. In the bowl of a stand mixer, beat the egg yolks until they lighten in color.
2. Gradually add the 1/3 cup sugar and continue to beat until it is completely dissolved.
3. Add the milk, cream, bourbon and nutmeg and stir to combine.
4. Place the egg whites in the bowl of a stand mixer and beat to soft peaks.
5. With the mixer still running gradually add the 1 tablespoon of sugar and beat until stiff peaks form.
6. Whisk the egg whites into the mixture.
7. Chill and serve.

How to make peanut butter bars


Original recipe makes 1 - 9x13 inch pan
Ingredients
1 cupbutter or margarine, melted
2 cupsgraham cracker crumbs
2 cupsconfectioners' sugar
1 cup of peanut butter
1 1/2 cupssemisweet chocolate chips
4 tablespoonspeanut butter
 
Directions
1. In a medium bowl, mix together the butter or margarine, graham cracker crumbs, confectioners' sugar, and 1 cup peanut butter until well blended.
2. Press evenly into the bottom of an ungreased 9x13 inch pan.
3. In a metal bowl over simmering water, or in the microwave, melt the chocolate chips with the peanut butter, stirring occasionally until smooth.
4. Spread over the prepared crust. Refrigerate for at least one hour before cutting into squares.

How to make a Homemade Pumpkin Bread

The picture above is a pic of homemade pumpkin bread. Which is what my post is gonna be about. Today's post will tell how to make pumpkin bread. If you will like something else just comment.

Ingredients
3 1/2 cups all-purpose flour (not self-rising flour)
2 tsp. baking soda
3 cups sugar (or 3 cups Splendor (or about 1/3 that if you use Stevia, which is my preference) OR a 50:50 mix of the sugar and Stevia/ or Splendor).
1 and 1/2 tsp. salt
2 tsp. cinnamon
2 tsp. nutmeg
1/2 teaspoon allspice
2 cups of fresh cooked pumpkin OR one 16 ounce can of canned pumpkin
1/2 cup water if you are using fresh cooked pumpkin OR 2/3 cup water if you are using commercial canned pumpkin
4 eggs, beaten
(Note for vegans: each egg can be replaced 1 tablespoon of flax meal mixed with 3 Tbs. water (mixed until it develops uniformly sticky consistency). That's 4 tablespoons of flax meal in total. The bread takes about 15 minutes longer to bake and is a little more dense but very good after a day of refrigeration.)
1 cup vegetable oil
1 cup chopped pecans (optional)
1/2 cup raisins (also optional)

Directions
1. Preheat oven to 350 F.
2. In a large mixing bowl, stir together the flour, soda, salt, cinnamon, allspice, nutmeg and sugar (or Stevia, my preference (or if you prefer, Splendor).
3. Add the eggs, water, oil and pumpkin.
4. Stir until blended.
5. If desired, add the raisins and/or nuts. Mix well, either by hand or with a mixer.
6. Pour into two lightly greased and floured 9x5" loaf pans. Or, use muffin pans if you want muffins instead of loaves!
7. Bake approximately 1 hour at 350 F (175 C). The test for doneness is the knife test: when a clean knife can be stuck in and removed cleanly.
8. Remove from the oven and cool slightly (10 minutes).
9. Then take the loaves out of pans to let cool on a rack.

Like banana bread, pumpkin bread tastes better if you wrap it in plastic wrap (Saran wrap, cling film), refrigerate it and wait until the following day to eat it. It keeps well in the refrigerator and can be frozen.

How to Make Homemade Strawberry Bread


This post will tell you how to make homemade strawberry bread. Yesterday I posted a homemade banana bread recipe. Again if you want a recipe to anything dealing with food products just comment.

Original recipe makes 2 - 9 x 5 inch loaves

Ingredients
2 cupsfresh strawberries
3 1/8 cupsall-purpose flour
2 cupswhite sugar
1 tablespoonground cinnamon
1 teaspoonsalt
1 teaspoonbaking soda
1 1/4 cupsvegetable oil
4 eggs, beaten
1 1/4 cupschopped pecans
 
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Butter and flour two 9 x 5 inch loaf pans.
2. Slice strawberries, and place in medium-sized bowl. Sprinkle lightly with sugar, and set aside while preparing bread mixture.
Combine flour, sugar, cinnamon, salt and baking soda in large bowl: mix well. 
4. Blend oil and eggs into strawberries. 
5. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened. 
6. Stir in pecans. 
7. Divide batter into pans.
8. Bake for 45 to 50 minutes, or until tester inserted comes out clean. 
9. Let cool in pans on wire rack for 10 minutes. 
10. Turn loaves out, and cool completely. ENJOY!!!

How to make Homemade Banana Bread?

This post is going to tell you the recipe to Banana Bread. If you would like a recipe to a different flavor of homemade bread just comment the flavor and I will make sure I put it on here.

Ingredients
  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar (can easily reduce to 3/4 cup)
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour
  •  
    Method
    1. Preheat the oven to 350°F (175°C).
    2. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
    3. Mix in the sugar, egg, and vanilla.
    4. Sprinkle the baking soda and salt over the mixture and mix in.
    5. Add the flour last, mix.
    6. Pour mixture into a buttered 4x8 inch loaf pan.
    7. Bake for 1 hour.
    8. Cool on a rack.
    9. Remove from pan and slice to serve.
     
    Makes One Loaf

    Recipe to Onion Rings

    This recipe makes three servings and here it is. I hope you enjoy.
    Ingredients
    1 large onion, cut into 1/4-inch slices
    1 1/4 cupsall-purpose flour
    1 teaspoonbaking powder
    1 teaspoon of salt
    1egg
    1 cupmilk, or as needed
    3/4 cupdry bread crumbs
    seasoned salt to taste
    1 quartoil for frying, or as needed
    Directions
    1. Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
    2. Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking      powder and salt.
    3. Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
    4. Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

    PREP 15 minutes
    COOK 3 minutes
    READY IN 18 minutes

    If YOU Like Pizza This is For You


    My example of the best dinner to eat is pizza its also easy to make and has a great taste. There different types of pizza here are some of the pizzas that you might like: pepperoni pizza, cheese pizza, BBQ (Bare-Be-Que) pizza, supreme pizza, and etc...The above picture is a cheese pizza. Below is a recipe to make cheese pizza.
    Recipe To Make a Cheese Pizza
    Ingredients
    1/4 ounce dry yeast
    1 cup water, lukewarm
    1 teaspoon sugar
    3 cups bread flour
    1/2 teaspoon salt
    1 tablespoon olive oil
    1/2 cup tomato puree
    2 tablespoons tomato paste
    1 garlic clove, minced
    1 tablespoon fresh basil, chopped
    4 ounces fresh mozzarella cheese
    Directions
    1.Dough.
    2.In a glass or plastic bowl, combine yeast, water, and sugar (the water can just be water from the tap, make sure it's below 100°F).
    3.Stir to dissolve the yeast and let the yeast "bloom" for 15 minutes.
    4.Stir in 1 cup flour, add salt, and then stir in another cup of flour (the remaining cup of flour will be your "bench" flour and added flour).
    5.Dump mixture onto kneading board and work in last cup of flour, kneading until dough is soft and elastic, but not sticky. Form dough into a ball.
    6.In another bowl, pour in the 1 tbsp olive oil and spread around.
    7.Coat ball of dough with oil and cover bowl with a damp towel and let dough rise for 40 minutes.
    8.Punch down dough and knead on board about 2 minutes. Dough is now ready to spread in the pan.
    9.To avoid sticking of crust, lightly spray pizza pan with olive oil or vegetable oil spray and then   work dough to pan (or use free form pan) - this dough is enough for 1 14-in pizza with a thin bottom crust and enough dough around the edge to munch.
    10.Sauce.
    11.Combine pureed tomatoes, tomato paste, minced garlic, and basil.
    12.Spread onto prepared pizza dough.
    13.Top with sliced mozzarella cheese and bake at 500°F for 11-13 minutes.

    The Best and Most Awesome Lunch to Have and The Secret Recipe

    The best and most awesome thing to eat for lunch is curried sausages (the above picture) and the recipe to make curried sausages is below. hope you are interested in making this awesome recipe when you see how good it sounds.
    Recipe To Curried Sausages
    Ingredients
    6 sausages
    1 cup of mixed vegetables
    1 chopped onion
    1 tablespoon of flour
    1 teaspoon of curry powder
    Directions
    1. Boil the sausages and peel the skin off.
    2. Slice them up into chunks.
    3. Place them in a saucepan with sufficient water to cover.
    4. Add onion, veggies and bring to the boil.
    5. In a small cup put flour, curry powder and enough cold water to make a paste.
    6. Remove saucepan from the heat and stir in thickening and replace on element.
    7. Bring saucepan back to a simmer and cook until veggies are done.
    8. Enjoy and let it last as long lasting as ever because this will make you wanna slap someone
